Though you can serve this salad as is, we also love it topped with crispy garlic chips. To make them, place 1/4 cup (1 1/2 oz./45 g) very thinly sliced garlic in a small sauté pan with 1/4 cup (60 ml) olive oil. Place over medium heat and gently fry, stirring occasionally, until the garlic is golden brown. Using a fine-mesh strainer, drain the chips, then transfer to a paper towel–lined plate and sprinkle with kosher salt. Reserve the garlicky oil for sautéing or making salad dressing.

Ingredients:

  • 1 plum tomato, peeled, cored, and seeded
  • 1 small garlic clove, minced
  • 1 Tbs. champagne vinegar
  • 1/4 cup (2 fl. oz./60 ml) extra-virgin olive oil
  • 1 1/2 Tbs. chopped fresh basil
  • Salt and freshly ground pepper, to taste
  • Pinch of sugar (optional)
  • 2 zucchini
  • 2 summer squash
  • 4 radishes, very thinly sliced
  • 2 shallots, very thinly sliced
  • 1 cup (6 oz./185 g) cherry tomatoes, halved
  • 1 cup (1 1/2 oz./45 g) crumbled cotija or feta
  • Garlic chips (optional; see note)

Directions:

Using a mini food processor, puree the tomato; you should have about 1/4 cup (2 fl. oz./60 ml).

In a small bowl, whisk together the tomato puree, minced garlic, champagne vinegar, olive oil and basil. Season to taste with salt and pepper. Taste and add the sugar if desired.

Trim the ends off the zucchini and summer squashes. Using a spiralizer fitted with the small shredder blade, cut the zucchini and squash into spaghetti-like spiral strands, using kitchen shears to cut the curls every 3 or 4 rotations.

Transfer the zucchini and squashes to a large bowl. Add the radishes, shallots and cherry tomatoes. Add the vinaigrette to taste and toss to evenly distribute. Top with the crumbled cotija and garlic chips and serve immediately. Serves 4.

Very adaptable, and any seasonal vegetables can be added freely once you've got "the base" and dressing, even leftover roasted veggies work beautifully.

Rated 4 out of 5 by from healthy and delicious This is a really, really good side dish for summer meals. Even my teenage son and his buddy ate every bite. Great balance of flavors and textures. Use top quality, perfectly ripe, preferably heirloom tomatoes if possible. I julienne'd the zucchini on a mandolin since I don't own a spiral peeler. I also prefer t a 2:1 oil/vinegar ratio vs the 4:1 suggested here, but that's up to personal taste. I used the Feta vs the Cotija because of the rest of the menu, but I'm sure the Cotija would be great as well. A little bit of sugar in the dressing is nice too.

Rated 5 out of 5 by from very tasty dressing A very tasty dressing that can be used for multiple dishes, such as new potatoes or a vegetable platter dip or even canned tuna. The tomato made the dressing more substanial. I made this dressing in my wonderful Vitamix blender, so that was quick and easy. It was fun spiralling the zucchini and we loved the texture when eating. I did add some spiralled carrots to the salad also. And I had blue cheese on hand, so I used that.

Rated 5 out of 5 by from Lettuce Free Salad - YUM I served this to my picky eaters and they loved it! Even my sister said she had never felt so full and satisfied from a salad. It is super quick to make (less than 10 minutes). Not having to wash any lettuce saved time. Also, I added some crumbled feta cheese and used a white balsamic dressing instead of the Tomato-Basil version, so it was light and tangy. Perfect for a weeknight when you don't have time to cook, or don't want any extra heat in the house.
